What is "Kevin"?
Well, a few years ago we were making the Big Pig Shiraz (see tasting notes for the Big Pig). Each year we trial some barrels we haven't used before to learn about them. The barrels we were trialing infused the wine with a smokey bacon flavour. The wine in those two barrels was nick named Kevin and it stuck.
Each year now we are buying 6 barrels like this with a view to making a Kevin. Its not a guaranteed thing each year as to make a wine like this we clearly need a great vintage to work with.
